This is a good time to harvest your mature carrots. How do you know they are ready for harvest? You will see a crown of orange right at the soil line. That means they are mature and ready for harvest. You can also harvest them sooner and you will find them a little more succulent if pulled younger. Here’s another tip – only pull out those that you are going to eat now because carrots will remain fresh in the ground for quite a while. I have pulled up fresh carrots even as late as Thanksgiving time. The tasty crispness of the carrot you grew over the last two or three months is not something you can get in the store. Enjoy!
